The Story

The highball is Japan's gift to easy drinking. Whisky and soda found its spiritual home in the postwar decades, when Suntory's standing bars poured the drink for a generation of office workers — crisp, cold, and endlessly refreshing. Decades later the haiboru returned to fashion, built with obsessive care: hard ice, precise ratios, gentle stirring.

Kamiki, the world's first whisky finished in Japanese Yoshino cedar casks, gives the formula a distinctly Japanese accent — sandalwood, green tea, and a temple-incense calm that soda water opens up beautifully.

Method

  1. 01 Fill a tall glass to the top with ice and stir to chill, discarding any melt.
  2. 02 Pour in the Kamiki and stir once or twice.
  3. 03 Top slowly with chilled soda down the side of the glass.
  4. 04 Give one gentle lift with the bar spoon — no more — and serve at once.
